This recipe is a cheats version of homemade baked beans which is a nod to the classic partner for baked potatoes. The roasted bacon and butter beans add a delicious twist, adding smoky flavour and texture to this meal.

Ingredients
2 teaspoons olive oil
1 large onion, peeled and diced
2 cloves garlic, finely chopped
200g Adelaide Hills Fine Foods Roasted Bacon chopped
1 teaspoon sweet smoked paprika
400g bottle passata (eg. Mutti)
2 teaspoons Worcestershire sauce
2 x 400g butter beans, drained and rinsed
Salt flakes and freshly ground black pepper
¼ cup coriander leaves
1/3 cup sour cream
Baked potatoes
4 large potatoes
1 teaspoon olive oil
Salt flakes and freshly ground black pepper
Method
- Preheat oven to 220°C (200°C fan-forced).
- Prick potatoes all over with a fork, rub each with a little olive oil and salt flakes, before placing in preheated oven for 1 hour or until skins are crispy.
- Meanwhile for the beans, heat olive oil in a non-stick saute pan over a low heat. Add onion, garlic, bacon and paprika, stirring gently to combine. Cover and cook for 10 minutes or until onion is tender.
- Add passata, Worcestershire sauce and beans, stirring to combine. Increase heat to medium and cook for 10 minutes or until sauce reduces and thickens. Season with salt and pepper.
- Serve jacket potatoes with roasted bacon and smoky beans, fresh coriander sprigs and sour cream.
