A classic Australian side-dish with our great tasting, high quality bacon produced using fresh South Australian pork loin that has been roasted and wood smoked in traditional brick smokehouses.

Tip: Choose the right potato – Dutch cream potatoes or Desiree have a lovely creamy texture.

Ingredients

  • 2 slices Skara Smokehouse Roasted Bacon cut into strips

  • 4 potatoes

  • 1 egg, boiled and chopped small

  • ½ red onion chopped finely

  • 1 handful fresh parsley, chopped

  • 4 tbsp kewpie mayonnaise (or whole egg mayonnaise)

  • ½ cup tasty cheese, grated

  • Prep time: 10 Minutes
  • Cooking time: 15 Minutes
  • Serves: 6-8 Sides

Method

  1. Peel potatoes and cut into approximately 2-3cm cubes. Boil potatoes until just tender and set aside to cool.
  2. Meanwhile place bacon in a small frypan over medium heat and stirfry until golden-brown. Remove from heat and set aside to cool.
  3. Meanwhile combine cooked potato, egg, red onion, parsley, mayonnaise and tasty cheese in a large bowl.
  4. Top with crispy bacon and serve chilled.
