This classic Italian dish is total comfort food and literally takes minutes to prepare. On those evenings when eggs on toast sounds like a great option, try this dish and you wont be disappointed!
Ingredients
4 eggs, lightly whisked
⅓ cup finely grated Parmesan
Salt flakes and freshly ground black pepper
¼ cup chives, finely chopped
¼ cup olive oil
200g pack Adelaide Hills Fine Foods Roasted Bacon, chopped
3 Garlic cloves, finely chopped
500g spaghetti
Method
- In a medium bowl combine eggs, parmesan, salt, pepper, chives together, whisking to combine. Set aside until required.
- Heat olive oil in a large non-stick saute pan over a medium heat. Add bacon and cook for 3-4 minutes or until golden. Add garlic and cook for a further two minutes. Remove pan from heat.
- Cook pasta in a large pot of salted water, following pack instructions. Drain.
- Add drained pasta to bacon mixture, tossing until well coated in oil. Allow pasta to cool slightly before adding egg mixture (to prevent it scrambling) tossing gently to combine until sauce thickens and becomes silky. Serve immediately.
