Enoki mushrooms are the perfect vegetable to wrap in our Maple Streaky Bacon, as they do not take long to cook. The sweet salty flavours of the side dish make it a great accompaniment for roast chicken and grilled fish.
100g Skara Maple Streaky Bacon
300g enoki mushrooms
2 spring onions, cut into 10cm pieces
1 tablespoon soy sauce
1 tablespoon maple syrup
⅛ teaspoon dried garlic powder
Sesame seeds, to sprinkle
- Heat the oven to 220°C (200C°C fan-forced) and line a shallow baking tray with baking paper.
- Place individual bacon rashes on a clean chopping board. Evenly divide enoki mushrooms into the same number of bacon rashes. Place across the centre of each bacon rasher with a piece of spring onion. Roll each bundle up and secure with a small skewer or toothpick. Place on prepared baking tray.
- In a small mixing bowl combine soy sauce, maple syrup and garlic together, stirring to combine. Brush glaze over mushroom bundles and cook in preheated oven for 10 minutes. Remove mushrooms from oven and brush again with glaze, cooking for a further 10 minutes, or until bacon is golden.
- Remove skewers and garnish with sesame seeds. Serve as a side with roasted or barbecued meats
