1 packet Skara Dry Cured Bacon
1 tbsp fresh chives, sliced
2 slices sourdough bread, lightly toasted
Salt and pepper, to taste
- Lightly fry bacon over medium high heat until crispy. Remove from heat and set aside to drain on paper towel.
- Meanwhile, crack eggs into a bowl and whisk lightly and add to the bacon pan. Cook on low for around 5 minutes until cooked through, stirring frequently to scramble.
- Top toasted sourdough with bacon and scrambled eggs. Garnish with chives and season to taste with salt and pepper.
