If you have nostalgic memories of the family classic ‘Sausage Curry’, then you will love this twist using pan fried fritz. Not only does our Fritz Curry taste delicious, it’s budget friendly and quick to prepare.
Ingredients
1 tablespoon olive oil
350g Adelaide Hills Fine Foods Fritz, quartered and sliced 5mm thick
2 large brown onions, peeled and chopped
2 large carrots, peeled and diced
2 cloves garlic, crushed
1 tablespoon Keens curry powder
2 cups chicken stock
¼ cup fruit chutney
2 tablespoons tomato paste
3 large potatoes, peeled and chopped
1 tbsp cornflour + 1 tbsp water
1 cup frozen peas, thawed
1 ½ cups rice
Method
- Heat 1 tablespoon olive oil in a non-stick saute pan over a medium heat. Add fritz in batches and brown on both sides for 2-3 minutes or until golden. Set aside until required.
- Reduce heat to low and using the same pan add onion, carrot, garlic and curry powder, stirring until evenly coated. Cover and cook for 10 minutes or until onion and carrot are tender.
- Increase heat to medium and add chicken stock, chutney, tomato paste and potatoes, cover and cook for 10 minutes or until potato is tender.
- In a small bowl combine cornflour with 1 tablespoon water, stirring until smooth. Add to the vegetables, stirring until mixture thickens.
- Add cooked fritz and peas, cooking for a further 2-3 minutes or until heated through.
