For those that don’t have a sweet tooth but still want a spectacular “cake“ centrepiece for a special celebration our Triple Cream Brie & Charcuterie Cake is for you. Once the charcuterie flowers are in place, choose your own adventure with how you decorate it to create a showstopping masterpiece!
Ingredients
1kg triple cream brie
200g triple cream brie
100g Skara Smallgoods Prosciutto
100g Skara Smallgoods Hungarian Salami
1 strawberry
1 tablespoon blueberries
50g green grapes
3 cherries
¼ cup roasted mixed nuts
Fresh edible flowers, to garnish (optional)
Fig & black olive artisan crackers
Method
- Place brie’s on a cake stand.
- For the salami rosette, use a small glass with a 4-5cm diameter, the smaller the better. Drape salami slices around the edge overlapping each one, to create the petals. Repeat process until all salami slices have been used. Turn glass upside down and gently release the salami rosette. Place salami rosette on top of small brie.
- For the prosciutto, fold each slice back on itself and group together to form a pompom type flower. Place on top of 1kg brie
- To decorate, place a selection of fillers like strawberries, blueberries, grapes, cherries, mixed roasted nuts and edible flowers on top. Place crackers in a bowl below.
