Ingredients

  • 4 boneless and skinless chicken thighs

  • ½ cup plain flour

  • 2 eggs

  • 1 ½ cups fresh breadcrumbs

  • ¼ cup grated parmesan

  • 1 tablespoon parsley, chopped

  • 2 x 200g Adelaide Hills Fine Foods Maple Streaky Bacon

  • ¼ cup olive oil

  • To Serve:

  • 4 brioche burger buns, cut sides toasted

  • 1/3 cup mayonnaise

  • Butter lettuce

  • Prep time: 20 Minutes
  • Cooking time: 15 Minutes
  • Serves: 4

Method

  1. Place chicken thighs between two sheets of plastic wrap and using a rolling pin gently flatten until approximately 1cm thick.
  2. To prepare for coating the chicken, place flour on a dinner plate and season generously with salt and pepper. Place eggs in a shallow bowl and whisk until well combined. Place breadcrumbs, parmesan and parsley together on another dinner plate, mixing until well combined.
  3. To coat chicken, dip each prepared chicken thigh in the seasoned flour until well coated, followed by the egg wash and then the breadcrumb mixture. Place on a baking tray until required.
  4. Preheat 1 teaspoon olive oil in a large non-stick frying pan over a medium heat. Add bacon to the pan and cook for 3-4 minutes or until lightly golden. Remove from pan and set aside until required.
  5. Add remaining oil to the same pan and increase heat to medium-high. Once oil is hot, add prepared chicken and cook for 3-4 minutes on each side or until cooked through. Remove chicken from pan and place on a clean chopping board.
  6. To serve, spread 2 teaspoons of mayonnaise over the toasted cut sides of each brioche bun and place lettuce leaves on top of the bottom half. Place at least 2 rashes of bacon across each crispy chicken thigh and using a sharp knife halve through the middle. Stack the two chicken halves and place on top of the lettuce. Serve immediately.
