Ingredients
- 2 slices Skara Smokehouse Roasted Bacon cut into strips
- 4 potatoes
- 1 egg, boiled and chopped small
- ½ red onion chopped finely
- 1 handful fresh parsley, chopped
- 4 tbsp kewpie mayonnaise (or whole egg mayonnaise)
- ½ cup tasty cheese, grated
Method
- Peel potatoes and cut into approximately 2-3cm cubes. Boil potatoes until just tender and set aside to cool.
- Place bacon in a small frypan over medium heat and stirfry until golden-brown. Remove from heat and set aside to cool.
- Meanwhile combine cooked potato, egg, red onion, parsley, mayonnaise and tasty cheese in a large bowl.
- Top with crispy bacon and serve chilled.
